I guess "when it goes mouldy" is a poor answer ...?
My mothers rule of thumb was when you can no longer bear the taste ... or when it starts to get fuzzy and you can no longer cut away from the fuzz.
Now that I've typed all of that I'm a little grossed out by bleu cheese.
I'm way grossed out by it now and think I will throw out my tub regardless....
